1. Pumpkin and Peanut Butter Cookies

easy-dog-friendly-christmas-recipe-1
Ingredients
  • 1 cup Pumpkin Puree
  • ½ cup All Natural Peanut Butter
  • 1¾ cup Whole Wheat Flour
Instructions
  • Preheat oven to 350 F Line cookie sheet with parchment paper.
  • Combine ingredients in a bowl and mix until it's clumpy and not sticky. I used my hands to make sure the dough was well combined and no dry ingredients were left out.
  • Lay down a sheet of parchment paper on your work surface and place the dough on the parchment sheet. Lay another sheet of parchment paper over the dough and use a rolling pin to roll dough to ¼ inch thick.
  • Once it is to your thickness liking, peel off the top parchment paper. Use your desired cookie cutter to start cutting out the treats. Place on your lined baking sheet.
  • Bake for 8-10 minutes at 350 F. Let cool completely. Store in an air tight container or in the freezer for up to 3 months.

2. Candy Canes

Ingredients
  • 3 cups whole wheat flour
  • ½ cup powdered milk
  • 1 cup chicken broth
  • 2 large eggs (set one aside for egg wash) 1 tsp.
  • Peppermint oil red food coloring (optional)
Instructions
  • Whisk all your wet ingredients together until well combined. Add dry ingredients, one at a time, stirring between each addition to incorporate.
  • Knead dough on floured surface for 2-3 minutes. Divide dough in half, make a well in one half and add the peppermint and food coloring - working it in and adding food coloring until desired color is reached.
  • Place both dough rolls back into bowl, cover, and refrigerate for 1 hour to firm dough.
  • Preheat oven to 350°.
  • Cover a cookie sheet in foil and spray with nonstick cooking spray.
  • Whisk egg for wash in a small bowl.
  • Remove dough from refrigerator, break each dough color up into an equal number of pieces- about a Tbsp. or so in size-depending on the size of the recipient.
  • Roll each ball into a small snake-like shape. Work on a long sheet of wax paper creating candy canes to prevent sticking- dough will still be somewhat sticky and that is normal.
  • Twist one of each color together and bend the end to create a hook shape. Place your “Candy Cane” on the foil lined baking sheet. Brush each with egg wash.
  • Bake for 10-12 minutes.

3. Fruity Christmas Truffle

Ingredients
  • 3/4 cup dog-friendly fruit, mashed or pureed
  • 2 tbsp coconut oil, warmed to liquid approximately
  • 1/4 cup coconut flour
  • Fine desiccated coconut (or other coating option) for rolling
Instructions
  • Thoroughly mash the chosen fruit in a mixing bowl (or puree for a more uniform truffle texture)
  • Add coconut oil. Incrementally add coconut flour. Add a little extra coconut flour or water if needed to adjust consistency to a nice sticky dough - precise measures can vary depending on the liquid in your fruit. The coconut oil will firm-up when chilled, so this dough may feel slightly oily/wet and crumbly when warm.
  • Press into small bite-sized balls, coat in coconut, and refrigerate until firm.
